You can craft a diamond apple using an enchanted golden apple, 4 diamond blocks, and 4 diamonds, which will give you absorbtion, speed, strength, resistance, and more.

The diamond apple can be used when fighting the ender dragon, or when you're about to die, as it will give you temporary hearts.
