Have you ever thought that minecraft vanilla biomes needed some revamp? not a big thing just a little detail added to them just to look something new but not heavy, Well Simplicity does that, and keep up to the name, Since it doesn't over complicated every biome of the overworld.
What it does is adding some underused features and blocks to more places, now you can find podzol around in most forested biomes in form of patches, some stone boulders in many places like plains, new taller trees to easy traveling trough forest or jungles so using a horse is not so uncomfortable in those biomes, and some other trees are even revamped like mangrove trees.
It also changes the color of water depending on temperature, rabbit and foxes are in way more biomes, and adds snow under trees and vegetation, but for this you will neeed a required resource pack but do not worry, this resource pack is fully compatible with any other resource pack, since it doesn't change any texture or blockstate, just a model.
Simplicity also changes caves biomes and oceans, but not a lot, deep dark for example have all of the lava frozen into obsidian and a new fog color to help the darkness, and ocean biomes don't generate dirt close to surface, snowy beaches are now made by gravel instead of sand, and there's seagrass in every biome were they could fit.
This pack is also fully compatible with vanilla seeds, so if you had a cool seed and want try out simplicity nothing will be missed, the biomes will be in the same place structures too and terrain generation still the same (this means only features changes with this pack), sadly you will have to choose between other world gen datapacks if you want every feature from Simplicity, but it also works with other datapacks.
