You can find a list of all the new recipes here in the Recipes file on the GitHub (that I linked in the wiki section here), with images of every recipe and texts explaining it if needed.
All recipes can be unlocked organically in the game in the recipe book, mostly the same way the original non-vegan recipe can be unlocked (I have added ways to unlock the recipes for items or blocks that weren't craftable originally, for example ink sacs/coal ink).
No original recipe has been overwritten, so people can play non-veganly even with the datapack installed. The Datapack only gives the option, the possibility of playing without killing animals nor using drops from them that mimic physical-world exploitation of animals (like honey, wool, etc). The idea was that it allows the datapack to be used in SMPs (Survival MultiPlayer servers) where not everyone wants to play vegan.
If you plan on using bundles (an experimental feature), you'll also have to download the Craftable Bundles (Leather) datapack from the VanillaTweaks website (to use beetroot leather to craft them).
Link to the Ressource Pack to modify in-game item and block names (for example changing "honeycomb" into "caramel")
